QUICK AND EASY RECIPES

Since we are all either living with FH or on our way to being domestic goddesses I thought it would be a cute idea to share some quick and easy recipes!!!

I LOVE cooking and I especially love making easy and fast (but delicious) recipes. So, here are some of my faves!!!!

Add on some of yours too!!

Hummus Pita Pizza

Take one whole wheat pita. Cover with hummus of your choice (I always use regular hummus) and then dice up little pieces of low fat cheese of your choice. I always use garlic and herb spreadable cheese--so good!!! Drizzle with a little EVVO and some spices and bake for about 15 minutes. VOILA--a very good and healthy treat!!

Salmon Pesto over Whole Wheat Pasta

Start by taking some salmon from a can (I promise, it's yummy!) and sautee over a very low flame for about a minute. Add into 2 heaping tablespoons of Pesto Sauce and sautee for about 2 minutes. While this is heating up, cut up some low-fat or non-fat mozzarella cheese and add on top. Stir it all together and add it to the top of some whole wheat pasta.

p.s.--this is my 500th post!!

Lamb Chops in Honey/Wine Sauce

Take 2 cups of wine and let it simmer over a low flame for about 15 minutes. At the same time, grill some lamb chops. You should first coat them with a little EVVO, salt, pepper and some oregano or thyme. Depending on the thickness of the cut, they probably need about 4-7 minutes on each side.

Once the wine has simmered for about 15 minutes, add 2 tablespoons of honey, salt, pepper (to taste) and some chopped up thyme or rosemary (fresh works best, but I've also used dried and it's still delicious). Whisk the ingredients to gether in the pain until the honey has dissolved and remove from the flame. Take a bowl and pour in the wine mixture and let the chops sit in the bowl for about 5-10 minutes. Serve and ENJOY!!!

Shrimp Saganakii

1 pound medium sized shrimp

Place the shrimp in a medium sized bowl. Add pepper, salt and oregano and olive oil. Stir together and set aside. Take a pyrex pan (or any other pan that you can stick in the broiler) and coat it with PAM. Pour the shrimp into the pan and make sure to even them out, distributing the shrimp all over the pan. Then, take about half a cup of bread crumbs (I used Italian flavored) and pour them all over the shrimp making sure to cover the entire pan. Then, take about 1/4 cup of crumbled feta and place on top of shrimp, and again, make sure to cover the whole pan. Add a little olive oil on top and then Broil for about 8 minutes and ENJOY!!

Stuffed Hot Dogs

1 package hot dogs
-cook them according to package instructions. Pull from heat and let them cool down. Simultaneously, make some instant mashed potatoes.

Get a baking pan and cover with PAM or butter spray. Slice hot dogs down the middle so that open up but NOT falling apart. They should be making a v shape.
Take 3 tablespoons of mashed potatoes and put into the hot dogs. Cover with shredded cheese and bake at 350 for 20 minutes and VOILA--stuffed hot dogs!!!!!

serve with a side of mac & cheese--soooo bad, its GOOD!!!!!

If you have a steamer . . . .(and if you don't, register for one -- wok/steamer combo is perfect)

It's not super quick because of waiting times, but the prep is not too bad.

Italian Stuffed Cabbage

Bring 2 cups of water to boil and throw in 1/2 cup dried porcini mushrooms, remove from heat, cover and let stand 10 mins.

Re-boil, and use that to make your favorite rice according to usual instructions . . . that's just the water for the rice now . . . .

Heat butter in a pan and brown minced garlic and onion (add celery and carrot chopped up if you like, I don't, or other kinds of mushrooms diced up) Saute about 7 minutes

Add that all to the rice when it's done, then add in a pound of hot or sweet Italian sausage meat -- either OUT of the casings or you can sometimes find it not rolled into sausage links. I then sprinkle fresh parmesan over the mixture and make sure you mix it all well.

Steam about 8-12 cabbage leaves in the steamer for 6 minutes.

Plop about 1/2 cup (no need to be exact, you can see what will fit), of mixture on middle of each cabbage leaf and roll it up like a wrap (fold in two 'skinny' ends, then roll) Put each roll in the steamer so that the loose end is down (it will seal up while it cooks).

Steam all the rolls for 30 mins.

While they're steaming, put one big can of crushed tomatoes, 2 tspns. brown sugar and 1 1/2 tbspns. red wine vinegar in saucepan, stir and heat until hot.

To serve: Ladle sauce onto plate or into wide bowl, and put 2 rolls on top. You can put more sauce or sauce and cheese on top, but you don't have to.

You'll have leftovers if it's just you two, but it's almost better the next day!

My FH died when I made this . . . . and it's easier than it sounds, you just need a steamer, that's key.

Once all the rolls are in the steamer,

Haha, I'm old and I've been cooking a loooong time. But I also find recipes EVERYWHERE and try them out . . . .

This one really was fun to make and sooo darn good. My FH loves me, but I think this meal sealed the deal . . . . . hehehe.

Re: QUICK AND EASY RECIPES

Sausage & Pasta

1 package of Fat Italian Sausage
1/2 jar of sun dried tomatoes (in oil)
1 lb of Penne or Rigatoni
1 bag of Frozen Broccoli florets
1 tblspoon of Garlic Powder

Put the water on to boil first. In the meantime take 4 or 5 fat italian sausage (whatever flavor you like) and take them out of the casing and break up into bite size pieces begin frying them up in the pan with a little cooking spray.

While those are cooking up take out 6 or 7 sundried tomatos and slice them into strips however large you like them.

When the sausage is browned and cooked through add the frozen broccoli and sun dried tomatos and mix together with the sausage and sprinkle garlic powder to taste, let sit on a low flame and cover. When the broccoli is complete defrosted and heated through turn off and leave covered.

When the pasta is done strain and mix everything together! I make extra to take for lunch or reheat for dinner a day or 2 later! Filling, tastes great, and reheats really well! Works good with whole wheat pasta also!

You can also substitute spinach, or escarole for the broccoli to change it up!
