Real vs freeze dried rose petals

I talked to my florist about putting petals on the tables and she said she recommended fresh instead of freeze dried. She said beause freeze dried are just that, dried petals. I was under the impression that while they are dried they LOOK like they are fresh.

Has anyone used FloJoy (I think that's the one company) or another company for freeze dried petals? What are your impressions of the quality of the petals?
