I promised my fiance that I would cook three meals this week. Frankly, I am screwed because I can't cook at all. I need ideas! However, here is an added difficulty. He is a vegetarian (no fish either, but dairy is ok). The recipe can't include any mushrooms, zucchini or squash- he hates them.
I know how to make eggplant parmagiana. I am hoping for some other ideas.
Pasta is always an easy dish to make - Ronzoni always has recipes on the side of the box - you can always modify it and take out chicken if necessary. I'll see what sites I have saved and send them on to you. Cooking veggie isn't so bad...once you get used to it. What's difficult is not liking certain things (I am not in love with carrots and could really do without eggs).
Does he do tofu??

Re: Recipe Help Pronto! Vegetarian Only!
Here are some... and while I'm no fan of PeTA...here are some good recipe links.
Also, most food sites include veg recipes - Kraft (not a fan of them either!), Betty Crocker, etc.

Re: Recipe Help Pronto! Vegetarian Only!
I am a former vegetarian, and VegWeb was my greatest resource!! One of my staples was simply pasta with broccoli, garlic, and olive oil. If you're going to cook with tofu I suggest you press the water out of it (by slicing it thinly and placing it between a few papertowels with a weight on top) for about half an hour before cooking. If you live near Manhasset, I strongly recommend shopping at Whole Foods on Northern Blvd... they have everything there a vegetarian (and non-veg!) could ever hope for!
Good luck!! Feel free to pick my brain for recipes if you want.

Re: Recipe Help Pronto! Vegetarian Only!
Rachel Ray (30 minute meals) made a delish green minestrone soup... also spanikopita (spinach pie) is good... I would go to epicurious.com or foodtv.com and type in vegetarian.

Pasta Piselli
1/2 cup extra-virgin olive oil 6 cloves garlic 1 Vidalia or white onion 3 anchovies, optional 1 (14.5-ounce) can vegetable broth 1/4 cup good-quality white wine Pinch red pepper flakes, optional 1 head cauliflower 1 bunch asparagus 2 cups fresh or frozen peas 12 Roma tomatoes, blanch, de-skinned, seeded, and chopped 1/4 cup slivered almonds, toasted 1 pound Penne Rigate pasta Freshly grated Parmesan or Romano
Fill a large stockpot with cold water and place over high heat. Pour olive oil in a large saucepan and turn the flame on low. Mince the garlic and add to olive oil, let cook until just starting to brown. Slice the onion and add to the garlic and olive oil. Add 3 anchovies to the pan and mash them until they disintegrate.
Next, add the vegetable broth and white wine. Turn the flame up to medium-low, and allow the broth and wine mixture to reduce for a couple minutes.
Take the head of cauliflower and peel away the green leaves. Cut off the stalks and discard. Chop the cauliflower crowns into bite-sized pieces, set aside. Add the chopped cauliflower to the onion/garlic mixture, and season with red pepper flakes, to taste. Reduce the heat back to medium, and let the cauliflower cook, stirring frequently.
Snap the asparagus in half and cut into bite size pieces on the diagonal. Add the asparagus and the peas and cook for about 5 minutes. When the asparagus is almost tender, add the tomatoes. The tomatoes should stay chunky, so do not cook too long, or stir the sauce too much because the tomatoes tend to fall apart. Add toasted almonds and season with salt and pepper, to taste. Remove from heat.
When the pasta water comes to a rolling boil, add some salt and then the pasta. Keep the heat on high. Cook pasta until firm to the bite, al dente. Drain and transfer pasta to a warm bowl. Sprinkle with olive oil, and gently toss. Then add the sauce and gently toss again.
DH loves them (even though he threw a fit when he heard i was making tofu)
package of extra firm tofu...drain and mash...mix in an egg and mozz cheese...and some italian herbs...
fry like a meatball...they will be a little flatter...but they are tasty
make with tomato sauce and pasta...

Re: Recipe Help Pronto! Vegetarian Only!
grilled cheese and veggie soup! that is super easy, and totally counts towards your 3 meal quota.
also, how about breakfast for dinner. you can get veggie sausage or bacon, and make pancakes.
you can also grill boca burgers with veggies on the side and vegatarian beans. you can also make black bean wraps- heat up a can of black beans, use some salsa to make them have a great flavor, add cheese/lett/tom on a wrap and serve with rice.

How about some cheese tortellini tossed with pesto? You can serve it with garlic bread, italian bread or a nice salad. Peirogies with sour cream are always easy too. Good luck!
