Recipe of the week Grilled chicken & zucchini parmeasan
YUMMY !!!!!!!!!
Shopping list:
6 piecs of grilled chicken (or just get chicken & grill it yourself)
4 green squash (Zucchini) sliced into disks
1 small vidalia onion (vidalia is sweet) sliced
shredded low far mozzarella
marinara sauce (if you dont make your own just buy a jar)
extra virgin olive oil
salt & pepper
1/4 cup seasoned bread crumbs
1 tablespoon grated cheese
1 large clove of garlic chopped
Preheat oven to 350 degrees
In a frying pan heat 1 tablespoon of the oil until hot like 90 seconds add the onion and cook 3 minutes then season the squash with salt & pepper and add it to the onions and cook another 3 minutes then add the garlic and cook 1 mintues - transfer to a plate lined with paper towel to soak up the extra oil. In an 8x8 or 11x7 baking dish - put alittle sauce in bottom and make sure it covers the entire bottom then just layer chicken topped with zucchini mixture topped with sauce & mozarella then repeat again - very easy & yummy. save some cheese for the top though. When your at the top sprinkle the bread crumbs & the parm cheese then top with mozzarella and sauce & bake for 25 minutes or until the cheese is bubbling. Let sit for 5 or 6 minutes before you cut it - i serve this with a tossed green salad & its awesome! Enjoy!
