Re: Recipes..
I have delicious and easy recipes for a bunch of things I've made recently that FH likes. I'm about to hop in the shower and take my kitty to the vet in about 45 min so I'll list a few things and if you're interested in the recipe i'll type it out before i leave.
Chicken Marsala (w/ mushroom sauce)
Bean burritos
chicken 'stuffed' with rice/cheese
lasagna
buffalo salad (with hot sauce and bleu cheese)
trader joes also has some great easy options that FH loves -- they have an amazing 3 bean chili, delicious turkey meatballs (not your typical turkey burger taste - they are amazing), and pre-cooked breaded chicken breasts that come frozen and are great for dipping or making a quick chicken parm

Re: Recipes..
Im all about mexican! I make 2 cans refried beans...heat them and then put them in an ovensafe container and cover that with shredded sharp cheddar and let it melt.
I make white rice and add a can of sofrito and some kidney beans and that my quick rice and beans.
I put tortilla chips and salsa out..
and then i decide what kind of tacos, burritos, etc... i also put some refried beans to the side for myself to put in a shell, much healthier.....
and then i put out alllllll the fixins..,..including sliced jalapeno.....
then we decide if were eating tacos or guesadillas...

Re: Recipes..
Last night I made lemon and garlic chicken.
I just took boneless, skinless chicken breasts (I cut them in half... I'll eat less that way), sprinkled crushed garlic (I used 3 cloves, but I looooove garlic) over the top (more like rubbed the garlic over the top), squeezed fresh lemon juice over the top along with a little bit of EVOO and then sprinkled just a tiny bit of Italian breadcrumbs over the top of the chicken.
I baked it in a Pyrex glass baking dish on 375 for about 30 minutes. It was very yummy! I also made baby red potatoes and mixed veggies on the side.

Re: Recipes..
I have a delish glazed meatloaf recipe if you want it, it is easy to make!
1/2 cup packed brown sugar 1/2 cup ketchup 1 1/2 pounds lean ground beef (I use turkey burgers) 3/4 cup milk (skim) 2 eggs (egg whites) 1 1/2 teaspoons salt 1/4 teaspoon ground black pepper 1 small onion, chopped 1/4 teaspoon ground ginger 3/4 cup finely crushed saltine cracker crumbs
DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan. Mix the brown sugar and ketchup in a bowl to pour over the meatloaf. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Bake in preheated oven for 1 hour or until juices are clear.
