Re: recipes!

DH and I love this recipe and I make it usually at least once a week.

Orecchiette with Turkey Sausage and Broccoli Rabe

Ingredients
2 bunches broccoli rabe, stems trimmed
1 pound orecchiette pasta
3 tablespoons olive oil
1 pound turkey Italian-style sausage, casings removed
3 garlic cloves, minced
Pinch dried crushed red pepper flakes
1/4 cup grated Parmesan
Directions
Cook the broccoli rabe in a large pot of boiling salted water until crisp tender, about 1 minute. Transfer the broccoli rabe to a large bowl of ice water to cool, saving the cooking water. Bring the reserved cooking water back to a boil.

Heat the oil in a heavy large skillet over medium heat. Add the sausage and cook, breaking it up into pieces with a spoon, until browned and juices form, about 12 minutes. Add the garlic and red pepper flakes, and saute until fragrant, about 2 minutes.

Meanwhile, when the reserved cooking water is boiling, add the orecchiette and cook until al dente, tender but still firm to the bite, stirring occasionally, about 8 minutes.

Strain the broccoli rabe and add it to the pan with the sausage mixture and toss to coat with the juices. Add the pasta to the skillet. Stir in the Parmesan and serve immediately.

ETA: I usually cut the recipe in half if it's just for the two of us.

Re: recipes!

I cook my sausage and peppers the old school (read un-healthy) way that my grandmother used to:

I use a combination of sweet and hot italian sausage. Cut each sausage link into about 3-4 pieces. Fry in a pan of olive oil until browned and cooked through. Remove sausage from pan - DO NOT discard oil.

Cut onion into slices. Fry those in the same oil used for the sausage (add more if necessary) until soft and tender. Cut italian peppers into long strips. Add to onions and cook until peppers are also soft and tender.

Put sausage back in the pan with the onions and peppers and mix well.

Re: recipes!

this recipe is really easy and it makes alot so we usually have as leftovers and lunch

Tortellini Soup
Ingredients
bag of fresh baby spinach
bag of frozen tortellini
cut up carrots and celery
cut up onions
1 tbsp olive oil
salt and pepper
2 pieces of minced garlic
chicken or veggie broth- usually about 5 or 6 -14 oz cans

Sautee the garlic and olive oil in a pan for about a minute and then add the onion for about 2 minutes. While you are doing this have the broth heating up in a pot. Add the olive oil and onions to the broth and then add in the celery and carrots. Keep the broth cooking until the celery and carrots are tender and then add the fresh spinach a little at a time and then the tortellini and remove from heat. The tortellini cooks really quick and it will get mushy if it cooks for too long. Add salt, pepper and parmesan.

I usually serve it with some warm bread.
