Re: Rehearsal dinner
We booked ours 1-2 mos in advance...
My BFF lives in Babylon and we just had a phenomenal lunch at Argyle...they have a room in the back that would be great for a rehearsal dinner. http://www.theargylegrill.com/index.htm
A new wine / tapas bar called Barrique just opened across the street and it's super cute, if you have a small party.
The Babylon Carriage House is also delish...and Gemelli's for Italian.
The Post Office is a little more casual..also great food. So many great choices in Babylon! Super cute town.

Re: Rehearsal dinner
In Babylon I like IL Vagio, Don Juans, the Carriage House and I'm sure there is more but I can't think of them off the top of my head. I would call the restaurants you are interested in and find out when you have to book them. I am sure the sooner the better and everyone I have been too have lasted about 2-3 hrs because everyone has to order, drink, talk and then the gifts are handed out.

Re: Rehearsal dinner
I live in Babylon... the Argyle & Cafe Il Villagio are my favorite places to eat! I would check those out. Another place, a little more casual, I would suggest is Brooklyn Pizza. They have a room sectioned off for parties. They are reasonably priced & you get A LOT of food! Its right on Deer Park Avenue, across from the new TD Bank, where Commack Road starts.
