DH and I want to make cupcakes using buttercream that isn't frosting or Icing. We want it to be smooth and silky texture like Cakes By jay or the other bakers we have tasted at wedding events. Anyone know what this kind of buttercream is called? Anyone have a recipe for it?
TIA!!

Re: repost- buttercream
I have nooo idea! LOL. But I know Cakes by Jay makes it as their buttercream. And I tasted a cake at an event from Wedding Cake Divas and theirs was basically the same. Same with Cake Altier. Its like wedding cake buttercream. its really light and silky. Its not like a frosting or icing consistancy...

Re: repost- buttercream
Are you talking about rolled fondant? My sister is a professional baker and says that's really the only thing she can think of ... but you can't really put those on cupcakes, unless you cover the whole cupcake (sides and top, not bottom).... you could cut it out I guess, but then it would have an edge, and rolled fondant looks nice because there is no hard edge ....

Re: repost- buttercream
cakes by jay and all of them are actually hardened sugar, not cream at all...it is like fondant but the way in which they decorate is different...cupcakes can be fondant topped-Martha's Country bakery in queens does a great job with them, I used them for my aunt's shower & Denise used them for her engagement party
ps: while writing this i was laughing bc Denise couldn't get the knife down during the cake cutting ceremony, that icing is tough as$
