FH really wants to go to Belize for our honeymoon, but so far all the resorts we've been looking at have been 'family friendly.' I'm not sure if it'll be an issue when we go on our honeymoon (we're going at a time when there aren't any American school vacations). I like kids...but not on my honeymoon!
We're looking to do: caving exploring Mayan ruins snorkeling kayaking being lazy on the beach
Any suggestions?

Don't mean to ruin your plans but a few people told me that Belize wasn't that great, there wasn't much to do and the area inst the safest. Maybe you would like to go to cancun, Puerto Valarta, or Cabos. You can still do all those activities.
