i am not sure about this...i mean width wise can it be 5-7in or should it be bigger

I think 7 inches should be good - maybe 5 would be on the small side for the ladies.

What flowers will they have?

It can be whatever size you want it to be, depending on the look you're going for. there's no 'set' size - i've seen beautiful bo-ks that were 7-10' across, and also some hand-tied bo-ks that were just a few lillies or something that were very small. what kind of flowers do you want to use? that might help you decide.
