Salads

Since we are all ON the diet wagon....does anyone have any good salads that you make?
I love salads, but get sick of them after a while bc they get repetitive.

Share what you got!

I add turkey in mine for some protein. Not very exciting but it does keep you fuller for a longer time.

I'm okay with just regular salads but I like to mix up what I add to them, sometimes low fat feta cheese, or dried cranberries or sunflower seeds. There are lots of choices to make a plain salad a little more interesting!

Re: Salads

My favorite salad I make at home is lettuce (duh), carrots, sometimes broccoli, sometimes green pepper, chopped walnuts, goat cheese, dried cranberries and a raspberry vinagrette or low fat honey dijon. It's SO delicious. And perfect as a side to a protein dinner.

At work I get either grilled chicken or buffalo chicken (it's grilled so not totally unhealthy), avocado, a little cheddar cheese and lots of veggies (carrots, broccoli, green peppers or roasted red peppers, corn, cucumbers, tomatoes) and low fat honey dijon. It keeps me feeling full the entire afternoon!

Also, adding chick peas to your salad adds tons of protein and also keeps you feeling full longer.

I like grilled chicken, avocado, cucumbers, kidney beans & grape tomatoes with a balsamic vinegarette dressing. The avocado makes it more delicious, imo cause I LOVE avocado!

Romaine and baby spinach (or any greens that you prefer) with a diced up pear and pecans with a maple vinaigrette dressing. Also, same salad but with a diced up apple, walnuts, and gorgonzola cheese (not too much) with a red wine vinaigrette dressing.

Re: Salads

I get mixed greens ... then I take portobello mushrooms and sautee them in balsamic vinigar (or a balsamic vinigarette) on the stove to make them soft and mushy, meanwhile the balsamic reduces making a syrup (bout 10-15 minutes). Then I slice up some pears, maybe some tomatoes & carrots, throw them in the salad... then I use a potato peeler and make parmesan cheese curls/strips (saw on food network that hard cheeses are much better for you then soft cheeses) then I throw on the mushrooms and drizzel some of the balsamic reductions. Its a really good recipe for when you are tired of COLD salads cause the balsamic and mushrooms make it nice and warm.

NOT exactly sure how healthy the balsamic glaze ...but because it reduces and gets thick when you cook it the flavor concentrates and you dont need to put a lot on the salad.

Re: Salads

My mom puts craisins and mandarin oranges, sometimes almond slices, with carrots, and cherry tomatoes, romaine lettuce, and usually a honey glazed chicken, over pita...it's good, but I think it needs to decide what kind of salad it wants to be, fruity or veggie lol.

I love salads with tomatoes, avocado, peppers and grilled chicken for a veggie salad, and then gorgonzola or blue cheese and cranberries with a raspberry vinaigrette and grilled chicken for a fruity.
