Does anyone have any suggestions on how else to make sausage beside sausage & peppers or making a plain sausage ring?

What about with Pasta? maybe Rigatoni with sundried tomatos, broccoli rabe, and sausage in G&O

Re: Sausage
For the sauage with alfredo sauce do you use just plain fat sausage or the ring?

Re: Sausage
YOU CAN USE EITHER ONE, BECAUSE YOU CUT IT UP. I PERSONALLY LIKE THE RING (PARSLEY & CHEESE).

Re: Sausage
Sausage + Spinach Risotto.
Olive Oil + Butter Pancetta Sausage Onion, large - divided Garlic Oregano, Basil, Parsley Red Pepper Flakes Salt + Pepper Spinach White Wine Salt + Pepper
Risotto (Arborio Rice) Chicken broth (in carton) ______________________________
The trick to this, is to have the risotto skillet going as you're preparing the sausage mixture. Just keep an eye on the risotto as you're working on the sausage skillet. _______________________________
Heat chicken broth in pot, using entire carton.
Saute half of large onion + risotto in skillet with olive oil + butter for one minute .. then slowly mix in chicken broth, 1 ladle at a time - wait for liquid to be nearly absorbed before adding more. (Save one last ladle-ful of broth for sausage mixture).
Saute diced Pancetta in small amount of olive oil + pat of butter.
Add diced onion, continue saute until onion started to cook down and become translucent.
Add sausage, removed from casings and broken into small pieces.
Add finely chopped garlic.
Season with Oregano, Basil + Parsley flakes.
Add pinch of Red Pepper Flakes, salt + pepper.
Add about 1 cup of white wine .. little more .. little less, depending on how much liquid is needed to be absorbed by sausage mixture, yet still have a puddle at the bottom of the skillet.
Add last ladle of chicken broth to sausage mixture.
Add risotto to sausage and combine well.
Add tons of spinach to the top and let it start to wilt down, then slowly start folding in to combine spinach into sausage risotto. ( Spinach shrinks a lot !! )
Let sit a few minutes for flavors to set.

Re: Sausage
Brown sausage in pan, add chopped onion, yellow & green squash let all cook until sausage is cooked 90% ... add a can of italian-seasoned stewed tomatoes (found near all the canned tomatoes in grocery store) ... its sooo good! Cook on low, covered, until sausage is cooked through and flavors blend (about 10-15 mins).
