Re: Sausage and Pepper recipe
There are a few ways I make this .. either with tomatoes or not .. and I generally prefer not.
Here's what I usually do ..
Slice a large onion. Slice a green pepper. Slice a red pepper. Cut sweet italian sausage (either pork, chicken or turkey) into nice size chunks.
Saute the onion in a touch of Extra Virgin Olive Oil over high heat, sprinkle in Mrs. Dash Garlic & Herb seasoning and pepper. As onion begins to cook down, add in sausage chunks. When sausage is cooked through, add in peppers. I like to keep the peppers relatively crisp, so I don't cook them too long .. just enough to get them to soften up and be hot. At all times during the cooking process, keep the ingredients moving well.
If I add tomatoes, I use Del Monte No Salt Added Diced Tomatoes.
This is a recipe I just goof with as I make it .. and it's so hard to mess it up. Vary the amount of onion, pepper, sausage, tomatoes to your own preference.
We usually like to put this on hero bread .. but we do like it over pasta too!
On a hero .. we don't slice the bread in half the typical way .. we cut down from the top of the bread along the sides to the bottom (without going through) and carefully peel this section out .. it creates a 'well' to hold your mixture in .. and helps to prevent everything from spilling out when eating.
