What's your opinion on seating cards. I'm having a buffet with about 55 people. Do I really need seating arrangements?

With 55 people you should be fine, especially since some of them will be aware well in advance of what the arrangements are.
I was at a large wedding, at least 100 people, and you felt compelled to claim a table and chair so you'd be sitting with friends, or even with your date! On top of it all, we weren't sure if more food was coming out or if it was just cocktails and light appetizers. Later, chafing dishes appeared, but there was no formal announcement so it was all kind of confusing.
