sichuan peanut noodles

A new favorite of mine... serves four

Dressing:

1/2 cup natural peanut butter (I like Crazy Richard's Chunky)
1/3 cup warm water
3 tablespoons soy sauce
3 tablespoons rice water
1 tablespoon sesame oil
1 1/2 tablespoons Chinese chili paste (or to taste)

Other ingredients:

1/2 pound linguine (actually, I use soba noodles or 'Asian' noodles by Kame or a similar brand)
One large cucumber, peeled, seeded, and chopped into cubes
1/2 cup chopped scallions
1/2 cake firm tofu, cut into cubes

Bring 2 quarts water to boil in a pot.

Meanwhile, whisk together all dressing ingredients in a bowl. Put chopped cucumbers, scallions, and tofu in with the dressing and put aside.

Cook the noodles in the boiling water for the amount of time specified on the noodle package. When noodles are done, put in colander and run cold water over them for a minute. Strain well. Place noodles in bowl with dressing, tofu, and veggies, and toss!

Enjoy!
