FMIL is actually letting me cook something for Thanksgiving this year!
For the past few years she has not only forbid me from cooking anything, she has kicked me out of her kitchen the week before Thanksgiving.
This year, she told me what to make. I'm so happy... I know it sounds stupid but it makes me feel loved.
Unfortunately she picked things I don't know how to make, and I don't have a 'real' over I have a convection oven so it'll be small portions but I'm sure i can figure it all out.
Now I have to tell my mom that I can't eat dinner at her house because I'm actually allowed to cook for FH's family. She'll understand. Right?

Re: So excited! NWR
I have to make Candied Yams (which i'm pretty sure i can fake, i've eaten them and it seems pretty easy to make)
the other thing i don't even know how to spell or pronounce it's some Italian thing .... i think i'll trade her that and make a pie instead.
I'm going to make my 'famous' chocolate pudding pie with home made whipped creme.

NOPE. lol part of me thinks she's letting me do this just to prove to her son that i can't make a good thanksgiving dinner so he has to eat there every year.

my secret is it's not really my recipe, I got it off the kraft website but I like to keep that on the d/l. Here is the link
side note: I know the recipe says use the big marshmallows but it's just way too much marshmallow, use the little ones instead

the cupcakes are betty crocker devils food
the icing is super easy..its an adapted wilton recipe
I tweak everyones recipes- haha
i dont even measure anymore. Its really hard to screw it up. I also like to use more butter than shortening
Basic Buttercream: 1/2 cup solid vegetable shortening 1/2 cup butter or margarine, softened 2 teaspoon real Vanilla Extract 4 cups sifted confectioners' sugar (approx. 1 lb.) 2 tablespoons milk (I USE WATER so it can stay at room temp longer) In large bowl, cream shortening and butter with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use. For best results, keep icing bowl in refrigerator when not in use. Refrigerated in an airtight container, this icing can be stored 2 weeks. Rewhip before using.
YIELD: Makes about 3 cups.
For thin (spreading) consistency icing, add 2 tablespoons light corn syrup, water or milk.
it can stay at room temp for 2-3 days

That's a tough one...that's really flattering, but for me, I'm torn too! At first my mom said she wasn't having Thanksgiving, then she said she might. The whole family won't be over though.....however, FH's aunt invited us over to go out east...I said yes, thinking that nothing was going on here. Now, I am not sure what is going on and do not want to leave my mom on my last Thanksgiving at home!

I am glad that this makes you happy! I hope you get the chance to make her sulk in the corner!
On the other hand, my FMIL e-mailed me today and asked me to make the sweet potato casserole. Neither I nor FH will eat that. I will make them anyway, but I am going to make stuffing that is going to knock her socks off!

Re: So excited! NWR
Thank you for the recipes ladies!
I can't figure out how to spell or pronounce the Italian thing lol but it's made with escerole and i'm not really sure what that is other than a green leafy vegetable and I only know that from working at a grocery store.
I spoke to my mom after posting this and I think she's okay with everything. She FORGOT to invite us over for Thanksgiving anyway. I just assumed it was at my Aunt's house like it usually is... well apparently it's not. It's at my parents' house... and we werent invited. Whatever, I won't be upset, and she won't be upset and we'll all be fine.
