You can start to panic 1 week after the RSVP day (that was the day I hit my minimum). At the actual RSVP date, I was missing over 100 responses.
I think you'll be ok. Have you gone over the list with your own and FH's family to see what they think about who's coming and who's not? That helps sometimes....

Re: so when should I start to panic?
you'll be ok ... but i'd send out emails or facebook messages to the people who haven't responded yet and remind them to send back their RSVPs

ita! go over your list and see who you think will/will not be coming and then just try to relax! hopefully you'll get most of your responses by this weekend!

don't worry. i was still missing like 200 response like a day before the due date. ppl just tend to send out responses late.

Re: so when should I start to panic?
Dont panic just yet. I am 40 below my minimum with just 4 days til the rsvp. And I am not sure I am gonan make. So it annoyed at this point b/c people swore they were coming which is why I cut some off my original list so i didnt go too much over 200

I do not think you should panic but you should start calling your guests to remind them of the upcoming due date.
