When we went shopping they told us they basically carry two different white shirts, one is a diamond white, and the other is almost an off white.

My friend bought a diamond white dress and her DH wore a diamond white tux shirt, so if they make diamond white shirts I would assume they make ivory shirts as well.

who is your designer? you can always go somewhere else that carries your designer and pretend you're looking at the dress and ask for a swatch, that's what i did... also bridal reflections will order big swatches for you for free if they carry your designer

yes they make them, and yes he will be wearing off white. if your dress isn't white, a white shirt will make your dress look dingy

His suit will be black but his shirt will be Ivory haven't decided about the tie and vest (maybe chocolate brown).

Yes they do make them. When we went I specifically asked that. So his shirt, vest and tie will all be an off white color. She told me to bring a sample of my fabric and they would match the shirt as best they could.
