I want to have some unique stations during the cocktail hour. The hall sounds like they would be willing to work with our requests. Has anyone seen or had really interesting stations?

We had:
-Irish station with bangers & mash and Guinness beer -Sushi station with chefs making sushi right there -Kebob station (veggie and no veggie kebobs)

We're having a mashed potato station - They scoop either regular mashed potatoes or mashed sweet potatoes with an ice cream scoop and put it in martini glasses. Then they have toppings you can add at your leisure.
We're also having a kids station: hamburgers chicken fingers pizza bagels french fries
Unfortunately, my kids station is not as much for the kids as it is for FH....the kids station has all of his favorite foods

I am a HUGE mashed potato station fan - I've seen it served in martini glasses with either regular mashed or sweet potatos YUMMMM

we're having:
a Paella Station (seafood Paella accompanied by gucamole, salsa, chips, cerviche ,and baked mussels)
A grill station with kebabs and grilled veggies
A peeking duck station
Shrimp/Clam bar Sushi Bar
Other options:
A dim sum station French Fry bar with all types of dippings Mini bar (sliders, blt's, rubens, fresh veggie fries)

I don't know if this counts as a station, but we're having a Martini Bar - with all custom Martinis. We're even naming some after ourselves and family members!
