I love these from Bon Appetit and if you don't like spicy, you could always substitute sweet italian sausage.

Re: Stuffed Mushrooms

I made them Friday night and they were soooooooo good. I followed a basic recipe and added some of my own stuff:

cut up the mushroom stems
italian breadcrumbs
onions (i used minced)
onion powder
garlic powder
italian seasoning
olive oil
salt and pepper...not sure if i left anything out

but put in some ollive oil and mix it all together, then stuff the mushrooms and bake them at 450 for about 20 minutes and put some motzarella cheese on top towards the end. SO GOOD!

I do something similar.
finely chop onions & mushroom stems (great in food processor) and pan sautee these in olive oil for about 3-4 minutes until onions are cooked through.
Then add more olive oil and Italian breadcrumbs untill you can sort of form a ball.
Place mushrooms on baking sheet- salt, pepper and srpinkly with parm cheese.
Stuff mushrooms, drizzle with Olive Oil and bake at 350

My stuffed mushrooms

I use baby bellas.

Remove the stems from the mushrooms.

In a medium mixing bowl combine breadcrumbs (I use the prepackaged ones),salt, pepper, cheese (I use mozzerella, chedder and blue, but you can use what ever you like), a little basil (fresh or dried), then add just enough olive oil to make the mixture hold together. I mix it with my hands. Stuff into the mushroom and bake at 350 for 10-15 min.
