Re: Swedish Meatballs....

3/4 lb ground beef
1/2 lb ground veal
1/4 lb ground pork
1 1/2 soft bread crumbs(about two slices of bread)
1 cup 1/2 & 1/2
1/2 cup chopped onion
1 egg
1/4 fresh chopped parsely
1 1/4 TS salt
pepper
ground ginger
ground nutmeg
1 beef bullion cube
1/2 ts instant coffee

Mix all of the meat together very weel, twice. Put the two slices of bread into a food processor and pulse or hand chop. Soak the soft bread crumbs in the half and half for 5 minutes.Saute the chopped onion just until tender(not brown) in 1 tbs butter.

Combine: 1 beaten egg, crumb mixture, onion, parsely, salt, dash pepper, dash nutmeg, dash ginger. Add meats. Beat 5 minutes @ medium speedor mix by hand until well combined. That will make 30 meatballs. (I would suggest putting the mix in the fridge for at least an hour before trying to form the balls the mixture is very sticky, also wet hands when forming the balls.)

In a skillet brown the meatballs in 2 tbs of butter. Remove from pan, reserve drippings. For gravy melt 2 tbs of butter in skillet with drippings. Stir in 2 tbs of flour. Add 1 beef bullion
cube disolved in 1 1/4 cup water and the instant coffee powder. Cook and stir till gravy thickens and bubbles. Add meatballs .Cover. Simmer slowly about 30 minutes; basting occasionally. Makes 6 to 8 servings. Good Luck!! These are great!!
