Tasting in Fountainhead, New Rochelle

Hi everyone, I am booking my receptions with Fountainhead in New Rochelle for my September 2002 wedding… The banquet manager told me that I'd only arrange for a tasting after I put down my deposit!!! And, he also said that I would have to make a 20% payment after I had my tasting with them. I thought it's very usual.. Does anyone have any similar experience? How does other place do tasting?? Thank you for all you help!! I'd appreciated it! =
