Thank you card - what to write to someone who was not invited but gave a gift??

So my stepmom's cousin who I have met once in my life who lives upstate NY - we didn't invite. My stepmom didn't give her to us on her invite list. They have gone to all her kids weddings but when I asked my stepmom she said that they are very low income and knew they wouldn't be able to afford the trip plus we were having a smaller wedding etc, etc. (I think it would have been nice to extend the invite anyway but what's done is done) anyway they sent me a nice gift of $200 - and I don't know what to write in the card...

any thoughts???

TIA....

'Thank you for your generous contribution to our future. We hope to one day own a home and your thoughtful gift has helped up to move closer to that goal.'
