The Good Carb Cookbook

The Good Carb Cookbook

I just got this book and it's excellent. I highly recommend it. It's written by Sandra Woodruff, a registered Dietician. She explains the difference between good carbs and bad carbs; good carbs being low GI carbs (Glycemic Index) and bad carbs being high GI carbs. This book will definately help you lose weight!

High GI carbs are quickly broken down and spike your insulin levels. They don't satisfy your hunger for very long. These are things like white bread, white rice, carrots, anything with sugar....

Low GI carbs are broken down more slowly by your body giving you more energy. These are things like brown rice, whole wheat breads, yams, real oatmeal, etc.

She gives a lot of recipes that look pretty decent. I just got the book yesterday so I haven't tried any of them out yet.

I got this book at Amazon.com brand-new from a private seller for like $10 plus shipping.

If you love carrots, eat them AFTER a workout. You body needs the sugar then. This is a good time to eat some higher sugar foods. The ONLY good time.

Hey Annie! I'm gonna buy that book!

You can definately eat them since they're a good source of beta carotine, but I guess if you eat them every day, cut back a little. I need to read more of this book to understand better...

Yabbobay - here's what it says in the book about carrots:

'With a glycemic index of 71, carrots are classified as a high-GI food. Does this mean that you should avoid carrots? No. Because carrots are so low in carbohydrate, they have a minimal effect on blood sugar in the amounts normally eaten. Remember, when researchers compare the GI of foods, they do so based on portions that deliver 50 grams of available carbohydrate. You would have to eat about 1 1/2 lbs. of carrots (10 medium) to consume this much carbohydrate. So put into perspective, carrots have only a mild effect on blood sugar. In fact, one study showed that adding 1 to 1 1/2 cups of carrots to a meal actually lowered the GI of the meal and increased people's feelings of fullness. Carrots are excellent sources of the health-promoting phytochemicals carotenoids and many other nutrients, so by all means, include them in your diet.'
