I've gone to Cancun a few times, and the last time we went, we went to the Rivera Maya and stayed at the Aventure Spa Palace.
There's so much to do, it really depends on what you guys like. Swimming w/ dolphins, Carlos-n-Charlie's....the plaza in town... the Riviera, it's gorgeous. You can take a day trip to Cozamel and go to the small town there. They have cute shops and places to eat (& drink of course)

i went to Cancun and there are a lot of fun things to do !!!!!! We went on these speed boats and it took us snorkeling... it was fun!
the ruins are there too- beaches- water sports shopping

We're going to probably either go to Chichen-Itza or Isla Mujeres or both since it's all included with our package.

Omg, there is so much to do in that area. you can visit this little town called playa del carmen, so quaint and cute where you can do a lot of shopping, go out for a nice dinner, etc. You can also take the ferry to cozumel from there. You can also visit the mayan ruins at Tulum or they have this eco park called xel ha where you can go river rafting, swim, etc.
you can also go do horseback riding or drive atvs.
So many things, but that's pretty much what comes to mind. Hope that helps.

Xcaret is a great day trip. You can lounge around, or swim with dolphins. You could have lunch and go snorkeling. There's lots to do.
