Who are we 'supposed' to tip, and How much is general?

15-20% (1-15% extra for 'special service')

Servers

15-20%

Table captains
2.5%

Restroom/coatroom attendants
50cents per guest

Clergy who officiate
Donation of $25 and up

Civil ceremony officiant
$10 and up

Photographer
Videographer
Musician
1-15% for 'extra special services'

Chaffeur
15% of rental costs

if your tip is already included (they added 18%) should you still tip waitstaff, bartenders etc... the 15-20%? or should you just do a little extra? or no extra? (what's normal?)

The 15-20% is off the final bill.
If it's already included, you're all set, unless you feel they deserve a little more.

When the hall says 18% of gratuity... WHO DOES THAT INCLUDE? I know it dosen't include Matire D, and Bridal Attendant... but does it include bartenders as well as waitstaff?

For the Fox Hollow it includes everybody except the Maitre'd. You have to tip him separately.
