I know this isn't helpful, but I know that in general, Catholic priests won't do a Catholic wedding outside of a church. They have to be done inside a church. Your times may also be limited due to church services. If you're not set on a Catholic mass, you may have more luck with a different denomination of Christian minister.

I'm going through this myself right now. Catholic priests will marry you outside of a church, but you still have to be inside of a building. I'm getting married by a priest and a rabbi at my RH, but I have to use their indoor ceremony site b/c the church won't allow an outdoor wedding. You need special dispensations to get married outside of the Church though. Meet with your pastor - it's just a matter of paperwork.

Marriage is a sacrament and they are always made in the church. Personally, I have never heard of an exception to this. Does a priest give Communion every Sunday on the beach? No.
The first place you should start is to speak to your priest and secure a date for your wedding ceremony. We booked ours over a year in advance and they were almost completely booked for the weekend we wanted. The ceremony is the most important part of your marriage if you are a practicing Catholic so yes, you need to get the date taken care of ASAP.
I hope you're not marrying in a Catholic church just to appease family. If you don't agree with their views or teachings, the closest faith to R.C. is Episcapalian, which is very similar to Catholicism but a lot less strict ( have female clergy, they accept gay) and may allow for outdoor ceremonies.

I'm using a reverend and a rabbi. I know a roman catholic priest won't marry you outsi of church but will come to do a ceremony. My cousin did this after they got married in church day before the wedding.
Don't do anything you don't want to, if your family is being difficult now, imagine when you guys have kids,
Best of luck!

My pastor is a Bishop and filled out the paperwork with me to get married outside of the Church itself and inside Thatched Cottage. I have to get married indoors, I can't use the gazebo. The only time they will allow a Catholic to marry outside the actual Church building is if they are having an interfaith marriage. 2 Catholics MUST get married inside of a Church.

having 2 ceremonies -Catholic & Jewish wedding
Lots of incorrect information floating around this thread. DH and I were married by a rabbi and a Catholic priest. Our ceremony was at our RH ad was to take place outdoors (Mother Nature nixed that at the last minute).

having 2 ceremonies -Catholic & Jewish wedding
Haha your too nice, if it was my family and my fh causing this drama I would tell them both not to come! (jk). It def a tough situation, I am catholic and my fh is jewish and we wouldve done a church wedding but it was just easier to do it at the RH. If you both arent religious personally why not just do a nondenominational ceremony i.e. justice of the peace. Your families will get over it.
