You are using too much oil- most likely. It doesn't need much. Also, use your cookie rack to allow the oil to drip off the cutlets (with paper towels underneath the rack) instead of stacking them on paper towels where they just soak and soak in the oil. Use a tad less sauce when you make the parma - you may be drenching the little cutlets in lots of sauce.

And there is always telling DH to make it himself

Lately I have been baking the cutlets instead of frying them! I like it that way better! Less grease!

I just put them in now lol
I signed on before to see if there were any last minute tips!! Luckily I breaded them last nite and made my sauce and grated the cheese yesterday so all I had to do was fry now
Ill let you know tomorrow if it was a success
I used less sauce this time

So? How did they taste? I never fry the cutlet first. I put them in a pan with some margarine in the bottom, already melted, and bake them for 20 minutes or so, depending on how thick they are. Then I add the sauce and cheese and cook another 15 or so minutes.

It's funny you ask this because we just made them for dinner last night.

are you putting the cutlets on paper towels after you fry them?? This helps absorb some of the oil.

Make sure you let the oil heat up before putting the cutlets, so its NOt saoking in the oil.

Just wanted to chime in and emphasize-make sure your oil is HOT before frying the cutlets!!!! If you are frying them in batches, make sure the oil comes back up to temperature before putting more cutlets in the pain. Very important!!! If the oil is not hot enough, the cutlets (or whatever your frying) will soak it up.

I second Chippa's vote for the deep fryer. I'll never fry in a pan again. It's amazing how little oil is actually absorbed and how perfectly crispy food comes out when you use it.
