Hi Alina
How are you? It was so nice meeting you at both GTG's/ Your a sweet heart.

I love stuffed peppers./ I used to make it years ago with gimmie lean. Trader goes sells it. I totally forgot about that. I think at one point we had gimmie lean so much that I wrote it off. I am going to get some and try it. Let me know if your idea is different.

Hey Liz, DH and I are both vegetarian. I posted some favorite recipes a few weeks ago on a post for someone looking to feed veggie guests. Check it out!

Re: Vegetarian Dishes

Liz, here is the long awaited Stuffed Pepper recipe. BTW, the Smart Ground package is 12oz, which is 1.5 cups, so you'll need to adjust the recipe if you plan to use only one package.

5 large peppers
2 cups meatless Smart Ground
2 tablespoons of chopped onion
1 cup of cooked rice
1 teaspoon of salt
1/8 teaspoon of garlic salt
1 15 oz can of tomato sauce
3/4 cup of shredded mozzarella or soy cheese

Cut tops off peppers, remove seeds, rinse. Cook 5 mins in enought boiling water to cover peppers. Drain. Saute onion until tender, add Meatless Smart Ground, rice, salt, garlic salt, and 1 cup of tomato sauce. Heat throughout.

Stuff peppers with mixture, and stand upright in a square baking dish. Pour remaining sauce over peppers. Cover and bake at 350F for 45 mins. Uncover, sprinkle with cheese and bake for additional 15 mins.
