i'm doing rehearsal dinner menus right now- if i just use vellum and don't put any paper underneath it- will the wording not be as clearly visible? is it a bad idea to use just vellum w/ no lining?

it will be hard...not impossible to read without a liner behind it. Try it and see how you like it!

If the ink color is dark enough maybe it won't matter. Let us know how you make out.
