Be careful with this! Vellum is not very heavy and durable, and it may not stand upright on your place card table, even if you do a tight fold. I have tried and failed for a Retirement Party I threw for FMIL. It's also hard to write on with a marker because it smears and takes ages to dry, so you'll have to get markers that are specifically designed for vellum, or use ballpoint ink. Request samples and do a test placecard before ordering a whole bunch. Try to get the heaviest stock available. Good luck & let us know what happens!
