try to get your homework done tonight so you can enjoy the weekend!!
SauceI use my grandmother's recipe:
This is what you'll need:
2 pork braciole
4 cans of Tuttoroso Crushed Tomatoes (I use this when I make it for FH, his parents, brother and me and we still have leftovers).
Sweet White Onion (finely chopped) - if it's a smaller onion, I usually use almost the entire thing
Garlic (finely chopped) - about 9/10 cloves
Fresh Ground Pepper
Salt
Over medium heat - with a little olive oil, sautee the finely chopped onions at the bottom of the pot, then throw in the finely chopped garlic (garlic cooks faster).
As you're cooking the onions and garlic, throw in the pork braciole & brown the meat (in the onions and garlic - it usually will turn almost a greyish color).
Once the pork braciole is browned, put the crushed tomatoes in. Stir all the ingredients.
Use fresh ground pepper & also salt to taste.
The sauce will start to boil and once it does, lower the heat to a low flame.
Keep on the stove for 4/5 hours (the longer you leave it on, the better it comes out) and stir frequently. (If you don't stir, the sauce will burn and you don't want burnt sauce).
Meatball recipe:
In a bowl combine the following:
1 1/2lb of ground pork, beef and veal combined
1-2 eggs (use one first and see how the texture is.. if it's too dry, use two. The meat can't be too wet or two dry b/c it'll fall apart. The meatballs should feel like they're held together well when you're making them).
Pecorino Romano Cheese - you can never have enough cheese
Fresh Ground Pepper
Garlic Powder (you can use finely chopped garlic too - which I usually do)
Onion Powder (you can use finely chopped sweet onion too - which I usually do)
(I don't add salt to mine b/c there's enough in the cheese and garlic/onion powders).
Take about a handful of meat and roll into a ball.
About an hr before your sauce is finished cooking, throw the meatballs in and put the flame back on medium.
Continue stirring but be careful, as you don't want to break any of the meatballs in the sauce.
Feel free to ask me if you have any questions :)
