I'm trying to find a really really really excellent olive oil.
The one I'm using is ok for cooking, but it just doesn't cut it when making salad dressings.

Thank you! I'm just started to learn about cooking. So, you should use differnet olive oils for different things, ie. salads, sauces, frying.

I use olive oil from sicily- i bought it at O & Co. in the city (there's a shop in grand central) they have the best olive oils for salad, but they are pricey ($18 for a small bottle- 32 for the tin)

I am an olive and olive oil importer, and believe me, the BEST olive oils are from Spain. I was just on an educational tour of some plants there, and when I lived in SPain (for 13 years) I exported olives, so I am familiar with the subject....In Italy, they buy from Spain, Turkey, Morrocco, Tunisia and wherever and then mix them in Italy and bam, it's labeled Italian Olive Oil... WHereas olive oil marked as Product of Spain is actually from Spain and in the purest form, hasn't been blended. You should look for 'FIRST COLD PRESS Extra Virgen' which is the VERY first pressing of the olive. This is the frutiest and MOST flavorful. ALso you should try to get ARBEQUINA variety -- this is the best flavor for Olive Oil. It comes from Catalonia, and is reknown for its wonderful flavor and is best used on salads and as a marinade or any other raw state -- NOT for frying! (Although you can sautee with it) Remember, if you do cook with olive oil, the flavor is way strong so you may want to mix with canola oil. And never, ever let it smoke. Always heat the pan up, then add the oil. Hope this helps!!
