I'm trying to redeem myself from my last off topic question...so I'll play it safe.
I collect chickens- mostly roosters (no male rooster jokes ). I started with them in my kitchen but they have slowly spread throughout the house. I even have some clothes with chickens on them.

i collect turtles.
sometimes it can be annoying, because whenever people don't know what to buy me, they just find some crappy thing with a turtle on it and think i'll love it. sometimes i just wanna be like no i really dont have a need for a babys teething ring, even though it is a turtle. i'm a little past the teething age myself and not having kids for some time.
its the thought that counts though, i'm not bitter.

I love throw pillows with different sayings on them, and if you ask my husband, i collect shoes, perfume, make-up, books about pregnancy, childbirth, breastfeeding, infantcare, etc (this is my passion, I will oneday deliver babies!!!)

Sunflowers...my sister collects Disney stuff and my mom collects cows. We only collect kitchen stuff though.

Baseball memorabilia, and dust. I started giving fw pretty as a picture statues, when we started dating, and still do for anniversaries, holidays, etc....

I collect turtles too! And I feel the same way. Actually, I have asked people not to buy me turtles anymore because I have so many. So I have requested no turtles unless they are really special.

Thimbles, Dolphins, turtles and frogs! People give me way too many dolphins...I do not need every single thing ever made with a dolphin on it!
I used to collect tweety bird stuff, and it got really ridiculous when a friend gave me a pink tweety bird parasol for my 21st b-day!!!

S'mores Ornaments...look for them on Ebay or the kohls website cuz they are the darndest cutest things EVER, butterflies, anything Gerbera Daisies used to collect barbies
DH collects video games, turtles, and eagles (and TOTALLY know what y'all are saying with the if it's a turtle, he'll want it....NO he doesn't want a turtle tee shirt....)

I used to collect Hallmark ornaments. I have two rubbermaid bins full of them. Yes, I put every single one on the christmas tree. DH curses as he puts them back in the box at the end of the year.

I used to collect things with horses on them. Then it got ridiculous and all I had was a room filled with figurines, stuffed horses, horse shaped mirrors and even a horse lamp.
Now I have horses spread through the house, but not largely concentrated in any one area.
Now I collect something better: SWEATERS!!! I must have 50 or more sweaters.

I try to pick up a Christmas ornament every place I travel to. I have from South Africa, Rio, Stockholm, Madrid, etc. etc..... Also some kind of wall art, be it a tapestry (Chile), watercolor (Jamaica), metal art (Barbados), whatever....
I have a Hummel collection my mom gave me, but I don't buy them myself.
I kind of have a Lladro collection -- I have 2 of them! But I would get more. Although I am really not big on knick-knacks, I make the exception for Lladros since I lived in SPain a long time and they kind of cure my nostalgia.
