I feel like we have many choices to choose from for our menu.

Wow! We get 8 entree choices, but we don't have thet much to choose from, they basically told us what they are, though we can change it.
How many options do you get? That changes my answer.

I dont know that we'll need a vegetarian option actually.
We get to choose one from each of the categories.

Do you get to do a tasting?
I would go with salmon. Most people love salmon.
The chicken dishes all sound kind of yummy so that would be a hard choice for me unless I could taste them.
And I would go for the rib eye. It's my favorite cut of beef.

My guests will able to choose from these 7 options: Veal chop fondue Amaretto Filet mignon Chicken Olivata Shrimp and salmon Sea bass provola North fork ( veg. meal) Duck 'l orange
If I had your options I would probably go with: Seared Sirloin Atlantic Salmon Cicken Marsala
Even though I looooveeeee pork, I know not everyone eats it, and if they want a red meat I would stick with something that everyone would like.

Yes, we get a tasting, but, the manager said that it's best if we can narrow it down to a few that way they don't need to make dishes that we know we won't need...like the BBQ ones (they are Asian flare and we're not going that route)

ITA! We have similar tastes.. IMO I would steer clear of the salmon.. salmon is something you eat at home. You want your guests to get something they're not going to eat everyday, the mahi mahi sounds amazing!!
