Re: what fish and how do you cook it?
we looooooooove tuna!! we buy thick tuna steaks (preferably 'sushi quality' from the fish store) & just sear them on the outside- we love them red on the inside like sushi. if you marinate in balsamic its even better!! you can also do this in the oven by broiling.
i also love broiled tilapia, it cooks real fast. i just put lemon juice & some cheese melted on top.
i'm not a big salmon fan, always tastes too fishy.
so can I throw the tuna in the George Forman grill for a few seconds?

I stuff striped bass with a crabmeat stuffing and lemon, butter, wine and bacon dressing. It is very very good if I do say so myself.

How about scallops? - This is so simple. Melt a little butter in a casserole dish. Put in the scallops (the big ones - not the . Top with a mixture of bread crumbs and parm. cheese and some pepper and maybe some garlic powder and paprika. Bake about 20/25 minutes or so.
I make a lot of grilled fish too - very easy. Grill salmon on your Formon grill or in the broiler - top with salsa! Sear tuna and serve with salsa.

I buy the crabmeat and make the stuffing with potato bread, garlic, breadcrumbs, pepper and lemon.

Take a salmon fillet, cover it in lemon pepper, and broil it for about 5 minutes on each side. I usually check the inside to see that it's cooked. Be careful - it's so easy to overcook fish.
