Help! Does anyone know what the catera does if you don't meet the minimum guarantee? I know we have to pay for that number but, what can be negotiated? Any information on this would be great? Or creative ideas from you ladies. I am looking at being about 20 short! Ugh!

A few things you might want to try:
** First try to get the minimum lowerd -in March they might be flex
** Add something else to your menu that brings up the price per head
** Donate the extra meals to a charity
** Is Westbury a Scoto Brothers establishment? if so see about gift certificates for their restaurants.
Remember- They had planned on supplying you with services and goods = to X $$
they are really only interested in bringing in the total $$$ planned for the night.
I would see if they will give you an upgrade if they offer them. Maybe have a Viennese table added or another entree choice.
Count your vendors & children towards your towards your minimum. Also...I dont remember if you said how close to your wedding it is, but dont be afraid to extend a verbal invite to some people who didnt make the original list. We did that with a few (mainly some more of my mother`s friends) and got very positive responses no one was offended. Then you can always give them the invite with the info (of course not needed to give them the response card). I have also heard that some places will give you a gift certificate if they also have a restaurant business.
I told the hall to add more shrimp to the cocktail hour. Maybe for you they can add extras to coktail hour, vienesse hour, or if flowers are included to give you an upgrade. Sometimes the hall gives you the food to take home.
