in a double boiler or if you don;t have one make one. Take a sauce pan and fill partially with water. Get either a glass or stainless steel bowl and place over the sauce pan. make sure water doesn't touch the bottom of the bowl. Simmer the water and stir the chocolate until melted. For extra shine on your chocolate add a pat of butter or a teaspoon of vegetable oil.

Li--I'm so confused! So basically glass bowl w/ chocolate in it and sauce pan w/ water in it do not touch?? So what am I doing---holding the glass bowl in the air as close to the boiling water as possible and stirring at the same time?????

No silly, put the glass bowl on the sauce pan, it could tocuh. Just don't let the water be too high in the saucepan to touch the bowl. Oh just call me later and I'll explain!

Another SUPER easy way is to melt it in the microwave. Just do it in 30 second intervals on a low power level, stirring inbetween each interval. The exact time depends on what type of chocolate and how much you are melting. It's a lot more difficult to burn this way, plus you don't run the risk of accidentally getting water in the chocolate and ruining it.

If you don't have access to a double boiler - I always just take 2 pots where one fits into the other. Pour boiling water in the bottom pot, but not enough to pour over into the smaller pot when you put it on top. The steam from the bottom pot melts the chocolate. But getting water into the chocolate ruins it!
