What to do with simple syrup??

I made simple syrup (equal parts of sugar and water) to sweeten mojitos this weekend.

Now I have a lot left over. What else can I use this for? Anyone ever candy fruit or fruit peel??

Anything but more drinks...I think I'm still nursing the hangover

Here's how we made them:

In a tall glass, add a couple of mint leaves and a tablespoon of syrup

Crush the leaves up with the back of a spoon and stir

Add juice of 1/2 lime

Add rum to taste-an oz or two and stir

Add ice cubes

Fill glass with club soda
