Smashed Parmesan Potatoes Recipe courtesy Giada De Laurentiis (Food TV)
3 pounds baby red-skinned potatoes, unpeeled, halved 2/3 cup freshly grated Parmesan 1/2 cup olive oil Salt and freshly ground black pepper
Combine the potatoes in a large pot of water. Cover and bring the water to a boil. Continue boiling until the potatoes are tender, about 15 minutes. Drain, reserving 3/4 cup of the cooking liquid. Return the potatoes to the pot. Coarsely mash the potatoes, adding enough reserved cooking liquid to moisten. Using a large fork, stir in the Parmesan and the oil. Season the potatoes, to taste, with salt and pepper and serve.

Re: What to make with sausage
How about sausage & peppers???
I put an inch of water in a pan and throw all of the sweet sausage in it. As the water evaporates, the sausage cooks nicely. Turn them over to brown all sides.
While you're doing that, cut up 2 red peppers and an onion. Cook in a frying pan that has olive oil on the bottom...low flame for about 30 minutes.
When both are done, cut up sausage and combine with red peppers and onions in a pyrex and cook in the oven for 15 minutes @ 350.
