I usually saute some spinach with garlic and olive oil...salt & pepper to taste and a little pinch of nutmeg.

Re: what's a good side dish for
A really simple, yet very tasty idea would be to make a roasted veggie platter. I do this all the time during the week b/c it's fast and I LOVE my veggies and this is such a simple way to get plenty of variety!
Cut up a variety of fresh veggies....broccoli, any color bell peppers, asparagus, onions, string beans, carrots, sweet potatoes (whatever you like!)
*Note - make sure to thinly cut the veggies that take longer to cook, like the carrots and sweet potatoes. The string beans and asparagus can be left whole, just trim the stems of the asparagus and use a veggie peeler on the lower half to remove any toughness. Peppers can be sliced in generous strips, as can the onions.
Place all the veggies in groups on a large cookie sheet with sides or a jelly roll pan. Drizzle with EVOO and sprinkle with salt and pepper. Roast in the oven at 425 for 15 minutes or until all veggies are tender, but firm.
This is DELICIOUS! Each vegetable's best flavor comes out...it's so plain and simple, but sooooo good!
