mom was ww tonight, so I'm making dinner... main ingredient- chicken cutlets
now... what can I make that's slightly outside the box. I dont want to make chick parm, campbells chicken roll, fried cutlets, things like that...
fh and I went out to dinner (spin off to follow) and I ordered bacon wrapped chicken stuffed with goat cheese and portabella mushrooms- OMG- UH-MAZE-ING! it tasted kinda like campbells chicken... which is my fav meal.
but I want do prove I can do something beyond the norm. (my parents think I can't cook- FH and I say otherwise) then again, they love my chickcutparm.. but i'm sick of it.
so ideas ladies? not sure whats in the house.... i know nothing too fancy.

Re: whats for dinner? (nwr)
DH and I usually make the following:
Chicken cutlets grilled (in a frying pan) with some garlic .... put a little cilantro and diced avocados on top ... then add a little bit of cheese (optional). Serve with rice and possibly a salad .... sooo good.
it actually works really well with a 'salad' of diced tomato and onion (and nothing else) ... we put it on top of the chicken sometimes ...
