Re: What's for dinner tonight???????????
Turkey meatloaf, mashed sweet potatoes, and asparagus. I just put dinner in the oven, so the recipes are fresh in my mind.
I know some ladies here don’t cook much, or are learning to cook, so I tried to be as thorough as possible with descriptions of ingredients. If you have a question, FM me and I’ll try to help!
Turkey Meatloaf
1 20.8 oz pkg ground turkey (Shady Brook Farms, 93/7 lean) 6-8 slices bread (soft white, wheat, potato, etc., not crusty Italian bread) 1-2 chopped shallots (or 1 small onion) handful chopped fresh Italian parsley a few big sprinkles of Bell’s Poultry Seasoning (little yellow box) 1 egg** (see note below)
Preheat oven to 350 degrees F.
Line a baking pan with foil for easy clean-up.
In a large mixing bowl, place ground turkey, shallots, parsley, and poultry seasoning. Moisten bread with a little water (or milk if you want). I hold a few slices under the cold faucet on low, until the bread just begins to wilt. Place into the bowl and use hands to mix all ingredients thoroughly.
Shape mixture into a long loaf in the pan. Pour a little water around the loaf to keep it moist and from burning in the oven. You can sprinkle a little poultry seasoning in the water so it makes its own “juice” to add to the gravy later on. Cover the loaf with foil and bake for about 1 hour. Uncover, then turn oven on “broil” or place in broiler for a minute or so to brown the top of the loaf. Keep an eye on it so it doesn’t burn.
**You can add an egg to the mixture to hold the loaf shape, but I find that it’s not necessary. I no longer use eggs, so I don’t even miss it. My mom uses Egg Beaters and says it works well (she’s taken a lot of her homemade recipes and adapted them to WW-style with low-point values). If you do add the egg, lessen the amount of water on the bread.
Low-fat Gravy
1 can Campbell’s Chicken Gravy (98% fat free) 1 tbsp or so Gravy Master (little glass bottle w/ orange cap/label) pan drippings from meatloaf (optional)
Mix together all ingredients and microwave until warm/hot to taste. Really easy!
