Whats the rule for hyphenated last names?

I'm thinking about having a hyphenated last name. How does that work usually?

For example when it's Mrs. Smith-Doe, will i be called Mrs. Smith-Doe, or will people chop it and go with Mrs. Doe, or Mrs. Smith?
