Vegetables are our friends! What is your favorite and what is your favorite way to prepare it?
I go for spinach, steamed with garlic & lemon.
Of course, I've never met a vegetable that I didn't like...with the right preparation!

Re: What's your favorite veggie?
Last night I made green squash & onions....
Spray the pan with pam, sprinkle in some italian seasoning & Mrs. Dash. Toss in the veggies, cover & sweat them down. Add a little water if the pan gets too hot. Salt and pepper to taste.
You can add bell peppers and/or yellow squash to the mix too.
I try to have a heap of fresh cooked veg with my 'lean protein' at dinner so that I don't feel like I'm such a food miser...
Plus when you prepare them without oil, etc..., they don't make too much of a dent calorically.
Tonight - baked acorn squash with splenda & cinnamon!

Love spinach! I buy the leaves, so I can make a salad, put it in my sandwich, or cook with it. Also, I can chop it up and give some to my finches. It's their favorite too!

How is this? I love squash with brown sugar and butter, but I've never tried Splenda... I'm intrigued...

Re: What's your favorite veggie?
Cooking squash this way is really good. I cut the squash in half and scoop out the goop. Spray a cookie sheet or shallow baking pan with Pam and put the halves in face down. (this helps them steam themselves)
Bake at 350 for 45-50 mins. Scoop the squash into a dish and sprinkle in the Splenda and cinnamon and give it a mix. You could even just sprinkle it on top and eat the squash out of it's shell - my dad does that.
Sometimes I add a tiny bit of butter but it doesn't really add that much.

I'll have to try that the next time I pick up some squash. Thanks!

Re: What's your favorite veggie?
If you haven't tried these you should:
fresh sugar snap peas
They are so tasty even all by themselves. If you eat the whole bag, its still just 120 calories...
You'll find them in your grocer's produce aisle!

Last night:
Heirloom tomatos in balsamic w/ a touch of olive oil. Looks like I might get a few more off the plants before they're done. I'm really glad that I got them b/c we had vine-fresh tomatos 1-2x per week.
