We had this problem too, as over half of the ppl coming to our wedding are Drs. (including FH and I). While it is perfectly fine to address the invitations as stated above, I was told that it is more formal to list each seperately (Doctor X and Doctor X).

The you could either do.
Dr. Joe Smith and Dr. Jane Smith OR Drs. Joe and Jane Smith
OR if they have different last names it would be: Dr. Joe Smith and Dr. Jane Doe

My family is full of doctors. Formal is The Doctors Smith I'm going semi-formal Drs. Michael & Lisa Smith I think 'The Doctors Smith' sounds weird.

We have the same problem- not with our family, but with our friends and us.
I definitely like the less formal and plan to do that.

one of FH's close friends are both Dr's with different last names and the last example is what we are using.
