I'm not sure how much everything is costing, but we're going to the Greek Isles and using frequent flyer miles. I think one hotel in Crete accepts the miles as well. We haven't done the hotels yet.

We're going to French Polynesia (Tahiti, Moorea and Bora Bora) for 10 days!!!
It's costing us $7,500 including r/t NON-STOP air from NY, interisland air, transfers, taxes, trip insuarance and 9 nights accomodations (beach bungalows and overwater bungalows) on 3 islands!!
ETA: We booked through Liberty in oceanside.

Inter islands flights, daily breakfast, car rental (convertible)=$4900
Flight's are almost covered by sky miles, we have to pay about $500-600 extra.

Still debating, but Secrets Excellence in Cancun is on our short list...the only way I could see it costing you $3000 per person is either staying there for 2 weeks or if you're getting the highest level room.
We had ours priced at about $2000pp with the Excellence Club Jr Suite for 8 days and 7 nights.
We're looking to spend no more than $4500 for a week, and right now it might be Aruba at the Hyatt Regency or Marriott,
