the lady at the florist said they were dropping the flowers off at the hotel at 1pm for a 7pm ceremony. I cant even check in until three?!?!?! we start taking pics at like three thirty. I feel like 1pm is way early?

It is really early, but i'm sure the hotel is prepared for something like this. Give them a call and confirm that this is ok. If not, have the florist drop them off where you will be at 1pm

someone you hire for the day of just to coordinate THAT DAY. they dont really do much beforehand except confirm with all of your vendors and maybe attend your rehearsal dinner. but they're there on teh big day so you dont have to worry if your flowers dont show up on time, etc. and you dont have to stress out your BMs or parents either

awe thank you for the offer I'll have to talk to FH about that. He will probably say no that he doesn't see the need to spend more money one though.
