So I just went to a wedding at the Woodlands...I'm getting married there myself in August.
I was planning on doing ALL tall centerpieces, however, I sat a table far back from the dance floor (the room is kind of long w/ the dance floor in the middle) and I couldn't see anything over the centerpieces next to the dance floor! The room has high ceilings, so tall looked beautiful...but i think i'm going to do low centerpieces at the tables right next to the dance floor. I saw this done at a wedding once and you barely even notice it. Plus it will keep the view of the dance floor open!
Just my thoughts!!

We are doing a mix of high and low. We know the room needed something, and I think the high and low balances things out a bit.
