We were talking earlier in the week about making cake with diet soda instead of eggs and oil..
Does anyone know, do you have to adjust the cooking time or temp for that?
TIA!

Re: WW cake w/diet soda question
Yes I did it too. Not sure if you're putting egg whites in it too, but that helps make it rise and fluffy. Still low fat cause its the whites and not the whole egg. It was so good

Re: WW cake w/diet soda question
OK, so I made cupcakes as well...
I'm not sure if they're underdone or if the texture is just how they come out with the soda? They crumble REALLY easy and they're a little... I dunno... like, they're moist, maybe a little too moist? Did I take them out too early?
They taste good, which I guess is what matters... I did chocolate cake with diet cherry Dr Pepper which was a nice combo

Re: WW cake w/diet soda question
I left mine in for the amount of time on the box. Maybe a bit longer bc I like well done cupcakes
The first batch I did was a little runny in the middle, but once I let it set and cool down, they were perfect.
Haven't tried the chocolate/diet cherry dr pepper but that sound scrumptious!

Re: WW cake w/diet soda question
i've done it before - you just follow the rest of the instructions on the box. i find that doing it with diet coke tastes the best but i've done it with fresca, diet sprite, etc. too.

i found that i had to cook it just a couple of minutes longer...but I would follow the box instructions just to avoid overcooking it!

Re: WW cake w/diet soda question
Just did it this weekend. FH argued that it would come out horrible. But, we used Devil's Food cake mix and diet cola. It came out AMAZING! Just keep watching and checking on it. I believe it cooked for about 32 - 35 minutes.

Re: WW cake w/diet soda question
My friend did this with a brownie mix and it was yummy, but the texture was kind of wet and rubbery.

Re: WW cake w/diet soda question
wet and rubbery, yeah, that's how my cupcakes were! And I didn't know if it was the soda or that I didn't leave them in long enough... box said 19-22 minutes so I left them for 20 and the toothpick came out clean so I took them out...

Wait, I've never heard of this. Just applesauce or pumpkin in lieu of butter or oil. So how much soda do u put in lieu of eggs?? I'm sooo gonna try it.

No oil, no eggs, just 12 oz (1 can ) of soda, cake flavor of choice, diet soda flavor of choice. But i'm now being told that adding an egg white as well will make them fluffier.
The chery dr pepper came good with the chocolate cake... the texture was just strange.

Re: WW cake w/diet soda question
yesss add the egg white!!!
it gets rid of the rubbery texture!!
and use a full can of soda
i add 2 egg whites sometimes too, it doesnt add any extra points
and yes you can do a can of pumpkin instead of oil & butter also! great in the fall as a muffin!!!

ONE POINT!!! (not counting whatever you use to top it... I think if you use the sugar free cool whip it's still one point!)
